Jayaram Banan: From Dishwasher to ₹180 Crore Sagar Ratna Empire

· · 3 min read

Jayaram Banan, founder of the renowned Sagar Ratna restaurant chain, began his journey washing dishes for just ₹18 a month. Today, his enterprise boasts an annual revenue of nearly ₹180 crore, earning him the moniker 'Dosa King' of North India.

The inspiring entrepreneurial journey of Jayaram Banan, the visionary behind the popular South Indian restaurant chain Sagar Ratna, began with humble origins. At the tender age of 13, Banan left his home in Udupi, Karnataka, after a school exam failure, carrying only a small amount of borrowed money.

Early Struggles and Learning the Ropes

Banan's first stop was Mumbai, where he secured a job as a dishwasher at the Hindustan Organic Chemicals canteen in Panvel, earning a meager ₹18 per month. Over the next eight years, he diligently worked his way up, gaining invaluable experience in every aspect of restaurant operations—from waiting tables to managing staff and understanding customer service. By the end of this period, his monthly salary had risen to ₹200, but more importantly, he had acquired a foundational understanding of the food business.

Establishing a Foothold in Delhi

In 1973, Banan moved to Delhi, taking charge of a canteen at Central Electronics Ltd in Ghaziabad. This venture, started with an investment of less than ₹2,000 and three cooks, solidified his confidence as an independent food entrepreneur. These early successes paved the way for his most significant step.

The Birth of Sagar Ratna

After years of saving, Jayaram Banan opened his first restaurant, 'Sagar,' in Delhi's Defence Colony market in 1986. With an initial investment of approximately ₹5,000, the 40-seater establishment quickly became known for its authentic South Indian staples like idli, dosa, and sambar. Despite initial challenges with high rent and operating costs, the restaurant saw ₹408 in sales on its very first day. Banan's relentless dedication, often working from 7 AM until midnight, ensured its gradual growth. As demand soared, he expanded seating, yet queues of eager customers remained a common sight.

Expansion and Reclaiming Control

The success of 'Sagar' led to its expansion across Delhi, and in 1991, Banan acquired Woodlands. The brand officially became 'Sagar Ratna' and marked its wider North India expansion with its first franchise outlet in Ludhiana in 1999. The company later attracted private-equity investment in 2011 when India Equity Partners acquired a majority stake. However, Banan, driven by his entrepreneurial spirit, successfully bought back the investor's holding in 2017, regaining full control of his beloved chain.

A Legacy of Culinary Excellence

Today, Sagar Ratna continues its focus on vegetarian South Indian cuisine, expanding its footprint across India and even into international markets. The company reported an impressive revenue of approximately ₹179.65 crore in FY25, with a profit after tax of ₹12.26 crore. Jayaram Banan's journey from a young dishwasher to the proprietor of a multi-crore restaurant empire has rightfully earned him the title of North India's 'Dosa King,' a testament to his perseverance and business acumen.
