Michelin-starred chef Vikas Khanna has clarified his decision to open his celebrated restaurant, Bungalow, in New York City rather than India, stating that New York offers an unparalleled platform to showcase the global appeal of Indian cuisine.

A Personal Homage in the Global Culinary Hub

In a recent interview, Khanna described Bungalow as more than just a fine-dining establishment; it's a heartfelt homage to his family, particularly his late sister, Radhika Khanna, who passed away in 2022. “With Bungalow, I live her dream. I keep her alive through my work,” he explained, emphasizing that the restaurant's foundation is built on values of family, celebration, and storytelling.

Opened in 2024, Bungalow has rapidly become one of New York's most sought-after dining destinations, earning a prestigious three-star review from The New York Times. Reservations are reportedly among the hardest to secure in Manhattan, a testament to its critical and commercial success.

Elevating Indian Cuisine on the World Stage

Khanna, who grew up in Amritsar, has long pursued a mission to transform the perception of Indian food in the West. He recounted early career experiences where Indian cuisine was often confined to buffets and generic curries. “I didn't want anyone to restrict me to being a buffet chef or a curry chef,” Khanna stated, highlighting his determination to present Indian cuisine as world-class.

He likened his choice of New York to an athlete competing for an Olympic gold medal on the biggest stage, rather than staying in a comfort zone. For Khanna, Manhattan represents the ultimate challenge in the culinary world. He asserts that triumphing in one of the toughest restaurant markets globally significantly elevates the standing of Indian cuisine everywhere. “If Indian cuisine can thrive here, it can thrive anywhere,” he declared.

Despite overseeing multiple restaurant ventures, including some in Dubai, Khanna remains actively involved in Bungalow's kitchen every evening, underscoring his commitment to being a working chef. He noted that many internationally renowned chefs have struggled to achieve lasting success in New York, making Bungalow's achievements even more significant.
