Celebrated chef Gaggan Anand has made his highly anticipated return to the Indian culinary landscape with the opening of RAGA in central Delhi. This new 30-seat restaurant, co-founded with his long-time executive chef Rydo Anton, represents Anand's latest endeavor to engage with India's evolving fine-dining scene, which he notes has transformed significantly over the past decade.

RAGA presents an elaborate 22-course tasting menu, priced at ₹11,111 (approximately $116 USD), excluding beverages. The menu features signature dishes like 'Golden Egg' and 'Nalli Nihari' – a slow-cooked meat stew – alongside a host of new creations tailored specifically for the Delhi establishment. Early demand has been overwhelming, with the restaurant reportedly booked solid for several months since its recent opening.

A Distinct Identity for RAGA

After years of groundbreaking experimental cuisine at his eponymous Bangkok restaurant, which consistently topped regional and global rankings, the Kolkata-born chef sought to create something unique for India. Anand emphasized that RAGA needed to forge its own identity, rhythm, and language, distinct from the format and molecular gastronomy theatrics of his Bangkok flagship.

His previous attempts to open a restaurant in India over the last decade did not materialize, but Anand believes the current timing is opportune. He points to a burgeoning scene driven by talented young chefs, indicating a readiness in the Indian market for his innovative approach.

Strategic Partnership and Investment

Anand's return to India is backed by restaurateur Zorawar Kalra, who secured a prime location in Delhi's Connaught Place for RAGA. Kalra highlighted the substantial investment in the venture, describing RAGA as the most expensive restaurant in India on a cost-per-square-foot basis. The establishment boasts giant food-processing machines, glassware from Germany, crockery from Japan, and an internationally curated team, reflecting a commitment to a world-class dining experience.

Despite the premium offerings, Kalra stressed the importance of sustainable pricing. The ₹11,111 price point, while significant, is positioned to ensure long-term viability and broad appeal within the country's luxury dining segment, rather than being an exclusive, short-lived sprint.

India's Maturing Fine-Dining Market

The culinary landscape in India has undergone a remarkable transformation, fueled by a surge in millionaires and the pervasive influence of social media. A UBS report cited in Bloomberg indicated that India added over 31,000 millionaires last year, many of whom are young, well-traveled, and actively seeking unique, Instagrammable experiences. This demographic shift has fostered a more adventurous clientele, attracting internationally acclaimed Indian chefs back home and nurturing a new generation of local talent.

RAGA aims to capitalize on this growing appetite for experimental and high-end dining. With its ambitious menu and the backing of a visionary chef, the restaurant is poised to contribute significantly to placing India's fine-dining business more prominently on the global culinary map.
